The colors of autumn


Now that autumn is here the vegetables in our backyard are towards the end of their growth and production period. The tomato plants are still producing fruit, but the scarlet runner beans have dried up.

But look at those gorgeous beans hidden in the dried bean pods! They just need to be soaked overnight to be used in soup. Unfortunately that vibrant pink color will change to an ordinary beige color when the beans are simmering.

Part of my Farmers' Market treasures from yesterday.

I'll use the cauliflower for aloo gobi, the tomatoes for eggplant parmigiana, the peppers in a salad, and the garlic in all of the above!
