Lovely, delicious beets


There are so many ways to prepare beets and this is the easiest:

Rinse excess dirt off three or four beets.

Place the whole beets in a pot large enough to accommodate them and add enough water to cover the beets.

Bring the beets to a boil, then lower the heat to simmer for half an hour to 40 minutes.

Test after half an hour to see if the beets are tender by poking them with the tines of a fork.

When the fork can easily pierce the flesh, they are cooked.

Place the cooked, cooled beets on a chopping board. Peel the skin off and cut the ends.

Slice the beets into 1/4 " slices and place in a glass bowl.

Pour over the beets a tablespoon of organic, seasoned rice vinegar, add two tablespoons of organic grape seed or olive oil, and some freshly ground black pepper.

Toss the beet slices in the dressing until evenly coated, and serve at room temperature.

They are also nice mixed with spring greens, thinly sliced onions and either soft or grated goat cheese.
